Here’s a Fall-flavored salad dressing that works well for your vegan Halloween party food. It has kind of a beige color speckled with bits of red. Give it a gross name, like “Zombie Guts Vinaigrette” or something fun like that, and serve it over organic mixed salad greens at your party.
You can substitute other dried fruit in place of the cranberries, but they scream “Fall,” so I like to use them.
Vegan Halloween Recipe, Gross Salad Dressing
3/4 cup dried cranberries
3/4 cup water
1/8 teaspoon salt
1/3 cup fresh basil, chopped
1/4 cup canola oil
1/8 teaspoon ground cinnamon
1 teaspoon stone-ground mustard
Throw all ingredients into a blender. Blend until you get a creamy, thick mixture. You will need to stop the blender after a few seconds and scrape the sides down before continuing.
Serve on mixed organic greens for a salad.
Oh yeah, it may look gross, and you can give it a gross name, but it tastes great. Sweet, a little tart, creamy, with a touch of spice.
